Rotisserie Chicken Salad is such a fast and delicious meal.

We had a rotisserie chicken the other day from Fresh Market. Neal carved up the bird from the bone, breast meat for me and leg/thigh quarter for him was part of our meal that night. He portioned off some for me for a chicken salad later in the week.

I love that there are so many cooks on youtube with a near endless variations on so many recipes.

I decided for something a little different this time… Veronique: prepared with white seedless grapes.

The recipe also introduced the herb tarragon. Martha Stewart also uses the herb, I checked.

I served it up with some celery, vine ride tomato w/ pepper and oil, a little seaside cheddar with crackers, salad on a bed of red leaf lettuce.
